
As spring ushers in the warming earth, while the damp snowfalls of late winter are still on the ground, maple sugar season begins. In a tradition first taught to the settlers by North American natives, generations of maple farmers steward the forests with their hard work today.
Though the hand-carved pine taps and wooden pails hauled by yoke and oxen have been replaced by another era, the patient goodness of turning the sap to syrup remains. That is why, as maple farmers, they don't mind the frost nipping at their fingers or the long days and nights in the "sugar bush" tending the boiling syrup. For a taste as sweet as the earth is precious ... they take their time.
